Cut eggplant long ways (think Lasagna noodles), lay four strips of eggplant on the bottom of a 9x13 baking dish then drizzle olive oil over the eggplant. Now layer the following ingredients: sliced tomato, Spread 1 cup of ricotta cheese, 6 fresh basil leafs, shredded mozzarella cheese (your choice how much you like), Pour marinara across the entire surface area of the dish (about 1/2 the bottle). Repeat this order starting with the eggplant one more time. After you pour the last 1/2 of the marinara sauce across the dish place in the oven. Bake at 375 for approximately 35 minutes.
